Curry

This was always a staple in my home growing up. I love curry! When I lived in Japan, I had a friend from India whose parents owned an Indian restaurant. For school one day, they brought in curry and naan. It was amazing. Anyways, back to what I was saying. I love curry. I haven't made any my entire marriage, for some unknown reason, until a few weeks ago. What took me so long?! I made it and we loved it. Here it is:

This is a very good brand. I found it at a local oriental market.

Ingredients:

  • Golden Curry Sauce Mix (1/2 package serves 6)
  • 2 chicken breasts
  • 1 medium-large onion (chopped)
  • 3 potatoes (peeled and cubed)
  • 3 carrots  (peeled and cubed as well)
  • 3-4 Tbsp. butter
  • 3 1/3. water

Directions:

  1. Cut the chicken into cubes.
  2. Stir-fry the chicken and onions in butter in a large saucepan until the onions are lightly browned (about 3 minutes).
  3. Add carrots and potatoes.
  4. Add water and bring to a boil; reduce heat, cover and simmer until the chicken and veggies are tender (about 15 minutes).
  5. Remove the pan from heat, break sauce mix into pieces and add them to the pan; stir until completely melted.
  6. Return to heat and simmer 5 minutes stirring constantly.
  7. Serve hot over rice.
