This was always a staple in my home growing up. I love curry! When I lived in Japan, I had a friend from India whose parents owned an Indian restaurant. For school one day, they brought in curry and naan. It was amazing. Anyways, back to what I was saying. I love curry. I haven't made any my entire marriage, for some unknown reason, until a few weeks ago. What took me so long?! I made it and we loved it. Here it is:

Ingredients:
- Golden Curry Sauce Mix (1/2 package serves 6)
- 2 chicken breasts
- 1 medium-large onion (chopped)
- 3 potatoes (peeled and cubed)
- 3 carrots (peeled and cubed as well)
- 3-4 Tbsp. butter
- 3 1/3. water
Directions:
- Cut the chicken into cubes.
- Stir-fry the chicken and onions in butter in a large saucepan until the onions are lightly browned (about 3 minutes).
- Add carrots and potatoes.
- Add water and bring to a boil; reduce heat, cover and simmer until the chicken and veggies are tender (about 15 minutes).
- Remove the pan from heat, break sauce mix into pieces and add them to the pan; stir until completely melted.
- Return to heat and simmer 5 minutes stirring constantly.
- Serve hot over rice.
