German Pancakes

 This is one of my favorite breakfasts. It is so good that I'll even make it for dinner. It is quick and easy too with only 5 ingredients! I got it from my Cooking for Two cookbook which is awesome for small families. It's great to have recipes that have smaller portions; that way I don't have to divide any recipes. :) Try it out and you will love it!

Ingredients:

  • 2 Tbsp. butter
  • 3 eggs
  • 1/2 c. milk
  • 1/2 c. flour
  • 1/4 tsp. salt

Directions:

  1. While you are preheating the oven to 450 degrees F, place butter in 8" X 8" cake pan and put in the oven  to melt (don't let it burn!).
  2. Beat eggs in medium sized bowl.
  3. Stir in milk, flour, and salt.
  4. Mix well.
  5. Pour batter over melted butter.
  6. Bake at 450 fro 15-20 minutes (mine takes 15 if that so watch it near the end of the time) or until edges are golden brown.
  7. It will puff up and then deflate a bit when removed from oven. 
Serve with whatever toppings you like. Generally I just use powdered sugar but I had some strawberries I needed to use and it was incredible. Enjoy!
