Meat-Potato Casserole



This is a meal that I grew up with and has always been one of my favorites. Since we got married, it has become Greg's favorite dinner that I make. He always asks for it. There has never really been a name for this casserole so we just always called it by what is in it. Maybe we should think of something more creative but we have always known what dinner we were talking about. It is super easy to make.

Ingredients:
1 lb. ground beef
3-4 large potatoes
3 carrots
2/3 cup peas
1 can Cream of Mushroom soup
Salt and pepper

1. Preheat the oven to 400 degrees. Cut the potatoes and carrots into bite-size pieces.
2. Layer the ingredients in the casserole dish in the following order: Meat (bottom), potatoes, carrots, and peas. Spread the cream of mushroom soup over the top.
3. Cover and put in the oven for 45-60 minutes. It varies on how big or small the potatoes and carrots are cut. Check by spearing the potatoes and carrots in the center of the dish, if they are soft and the fork goes through easily, it's done. Salt and pepper to taste.
