Greg bought a big bag of tilapia one day and I had run out of different delicious ideas of how to cook it. And then I found this recipe on pinterest. It was so easy and amazing! Here it is:Ingredients:
3/4 cup grated Parmesan cheese
2 tsp paprika
1 Tbsp chopped parsley (dried or fresh)
4 tilapia fillets (about 1 pound)
1 lemon, cut into wedges
Salt and pepper
Directions:
Preheat the oven to 400°. In a shallow dish, mix the cheese with the paprika and parsley. Season mixture with salt and pepper. Drizzle the fish with olive oil and coat in the cheese mixture. Place the fish on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, about 10-12 minutes. Serve the fish with lemon wedges.
